The Importance of Food and Identity in Rum Production

We do lots of Jamaica for influence in how we make our rum. We emulate some of their rum-making techniques. Food and identity are quite closely intertwined. I think people are intrigued by the fact that it's made in Scotland, but they're more fascinated to explore what does a rum made in Scotland taste like? What's the rumour's? What’s the identity?
