What Is Enzymatic Browning?
Oxidation, in general, refers to a broad class of chemical reactions that take place when molecules are exposed to oxygen or another oxidizing agent. Oxidative browning is sought out as part of the preparation for tea leaves and other plant-based foods. It's used on purpose to achieve desirable improvements in appearance, texture, and flavor.
