If i was starting up a new restaurant, which one i would hire. I'd want to hire the experienced people so that i wouldn't screw up. Restaurant tours have to get smarter and start saying, no, if you want a restaurant to come in building,. you need to build the interstructure to do it. That's o restaurant business. When plus 70 % fail in three years, that's the restaurant business, and it doesn't work.
