It's not that easy to see. Do you know what I did one night? I was sitting at home and we were watching some kind of food show. And there was this guy, little tattoo-y chef. He talked about an heirloom rice where they sort of brought back a variation of rice that had been almost extinct. That's the Carolina Gold rice. What they were making with it looked delicious. A couple of weeks later, a very heavy package arrives at the house which is like seven kilos of this rice transported from America to Ireland.
