Using Different Varieties of Chili Pepper
A lot of what I find really fun about being a chef right now is just finding different ways to get to a destination, the final point. So especially with kimchi itself, there's so many different varieties of chilies that are used. And for me, it's not so much of staying. But man, if you brought that to a Korean dish like jum-pung or even kimchi, it's like kimchi. You're blowing my mind because gojigaru is sweet and can have many levels of heat, but smoking gojigari isn't part of Korean culture.
