How to Make a Buffet in a Restaurant

I've always wanted to do a buffet. I actually think it's probably economical for, for labor because you can actually just need one fucking awesome cook to just make super delicious stuff. We're legally required to have a salad bar, but we put it in the bathroom. It's very small. So all in great. And it really got my juices. This is why I'm an addict to restaurants and restaurant ideas.
