The Evolution of Sourdough
A Belgian bread fest was only one of the sourdough experiments Rob and Ann have got going on in their lab right now. They've already gotten about a thousand people from around the world to send in their sourdough starters. Some bacteria tend to live in more northerly Scandinavian countries, for instance. There's a little bit of a hint so far that maybe France is kind of special.
