The History of Japan's National Dish

The original form of sushi is known as narezushi and was a method of preserving fish in salt. Narezushi was likely introduced to Japan from China in the 8th century. The first modern sushi, or sushi perhaps we would recognise today, was created in the city of Edo in the 18th century. You can still find styles of narezushi in Japan.
