Dave arnold, the author of liquid intelligence, was called upon to create a boozy rift on an arnold palmer. He wanted to do this by infusing tea into vodka but found it tasted too tannic. So he decided to milk wash his black tea infused vodka. This took out the large tannins from the tea rendering it much rounder and softer.
