The Role of Starch in Cheese Sauces

Sam has been looking into the role that starch plays when you make a cheese sauce. He recently learned this cool trick that means that well you don't have to make a roux at the beginning which just saves a lot of the faff. Starch in flour is what thickens the sauce so when those starch granules heat up in water or flour then they they swell up and they burst, releasing all these starch molecules.
