The vast majority of industrial processes are continuous. They cannot stop and start with the sun and the wind. This just would be wildly uneconomic. So what are the tools we have for that intermittent electricity, which is becoming plentiful? In places right now, you can have essentially unlimited amounts briefly every day at prices far below fuel prices in many parts of the world. That works, although electrolyzers are today expensive, they're coming down in cost. But the laws of physics bite you in that you get about one unit of heat for every two units of electricity because of the chemical steps involved.
