What Kind of Cheese Do You Make?
Tomallo's creamery is located in the far western part of morin county, just by the sonoma county line. We raise goats and sheep on sight, and so we milk those, and then we also buy in some milk from a sylva dairy which is on the other side of our teeny, tiny town. Even moreofton enough, there are some lab tools that we use to check a butter fat content and things like that. But as you say, a lot of it is just tasting and ayolerar, like tir some fatty milk like that.
