Insulin and cortisol don't really play well together. Cortisol, one of our stress hormones, is going to compound or magnify the fat storing capability of insulin. The reason it's at its peak again is our natural sleep wake cycle. When we have our carbohydrates with a dinner time meal, not only do we not have the exaggerated blood sugar and insulin response, so that helps us with our fat burning potential.
