The Factors That Increase the Absorption of Iron

There are a number of factors that could perhaps increase or decrease the absorption of iron. The most powerful of those agents is ascorbic acid or vitamin C and that's a very potent reducing agent. Other small organic acids will also favor iron being present in its ferrous state, so malic acid or citric acid which we find in fruits and vegetables.
