Antimicrobial Properties of Mosses

A polyphenol is a carbon-containing chemical, characterized by usually many repeating phenol groups. Mosses are prime materials for nest building by songbirds. There's a suspicion that they eat them because of their antimicrobial properties and may do something to regulate digestion in the animals.
