How to Use Dry Malt Extract

Dry malt extract is more shelf stable, but you have to be in an incredibly dry environment for that to be the case. I always joke that you can breathe near DME and it'll seize up and clump up. That's how dry that stuff is. Any moisture, if your house is even remotely humid and opening up the bag of dry malt or the container or whatever is going to cause it to clump. The steam from the kettle will carry away tiny little flecks of that stuff and can leave it in weird places in your house or garage. So just be careful with that. But I personally, I've found dry malt extract slightly easier than liquid malt extract to use
