Coffee Bean Color Changes

As molecules heat, they start to move around more. This is partially responsible for the color changing in a coffee bean. Carmalization occurs at high temperatures between two sugar molecules. Even though coffee beans seem hard and dried, there is some water in them still. And as that pressure builds and builds, it physically expands the coffee bean.
