The Good Food Institute is a not-for-profit that promotes meat substitutes in the country. It might sound as though Gus' job is like mission impossible, but actually he says it's not as hard as you might think. In the end of the day, people are buying things that relate to their food habits and their food traditions. You're saying to them, you want meat, you love meat. Well, here you go, here's a new thing that's kind of like me even though it's not actually meat.
