A book called how to cook meat by chris lessenger and john willoughby is no longer available. It's easily findable for like, less than 20 bucks on line. The recipes are fine but i think the real insight there was the way that it approached me. Just people who use a lot of different cuts of meat. And awful, like fergus henderson's work.
