How to Fuck a Restaurant
I like to have three sections I like to do appetizers mid course and then here and then furthest right on the board is for holy fuck. A lot of restaurants that serve tasting menu at a counter only start the service when everyone's sitting down at the same time. If you're the fish cook and there's three different preparations Simultaneously it's very difficult to do even if it's a solo menu, but we're not doing that right now Just a normal all-acart menu.
