Lactic acid bacteria is what's responsible for just like any home fermentation. You make sauerkraut. If you get through your foods or buy them in a store, that's lactic acid bacteria. So yeah, so a lot to still kind of unpack, but it's an interesting thing. And I'm always like, oh, this kind of like philosophy, philosophical war that goes on in the wine world among those who like use sulfur and those who don't.
