The Benefits of Eating Raw

Over cooking can leach out micronutrients that we may be dependent on for our overall health. Cooking essentially externalizes part of the digestive process it makes all these nutrients more accessible to our body for absorption. At one extreme over cooking your food is bad but what about the other extreme eating all your food raw? Are there benefits to that?
