Is the Legacy of Noma a Positive One?

Noma has been criticized for using a large number of unpaid interns or stashy heirs. The negative press started a debate within the industry, and Noma started paying interns in October. Do we really want to sit through four or five-hour meals and eat 26 courses and only remember five of them at the end of the day? So I think a lot of that is being reconsidered right now, and probably should be.
