In 1605 French explorer Samuel Ditch-Happellain reported that the indigenous people of Cape Cod ate Jerusalem artichokes. The plant was taken to France and became a relatively popular food for humans and animals especially pigs. Raw or cooked, the flavor of the tuber can actually be really enjoyable. If you don't cook it, you're gonna get you're gonna have gas. That's why it's called the fartichoke.
