The Elastic Structure of Mushrooms
The structure of a mushroom, as it is, is a lot like a sponge. Now I'm squeezing it, no water's coming out. It's like all the holes of the sponge are actually filled and sealed. But there is 92% moisture in this thing as it is. As it doesn't matter how much I squeeze it, I'm not breaking apart the cells. What happens is this elastic structure, which we'll know later whenever we get into that meaty elastic bounce. When all the cells rupture, they collapse in on themselves but they don't break apart from each other.
