Sulfur could be a big cause for people who think they're getting sulfate headaches. Bacteria are more sensitive to sulfur dioxide. That's why that small amount of sulfur dioxide prior to primary fermentation can knock back the bacteria, but not the native yeast as much. But on the other side, the lactic acid bacteria are considered probiotics.
