The Effects of Oxygen on Beer Shelf Stability
I'm almost certain it was a significant difference between those two beers. I'd be really hesitant to use LME that's any older than maybe sitting on the shelf for longer than three months or so. So DME, that being said, I've had DME sit in a, you know, unopened in a bag in my brew shelf for about a year and a half. And I go to it and it's perfectly fine. If you've got the me, just sitting around,. you know, use it for a starter. There's nothing that the sugars are still there.
