The Importance of Protein in the Diet
The emphasis on lean protein is also probably a throwback to a time when dietary protein was largely synonymous with meat. About half of the fat in red meat, for example, is actually heart-healthy, monounsaturated fat. Fried foods tend to be high in HNEs - toxic compounds that are formed when polyunsaturated oils are repeatedly heated or held at very high temperatures.
