The first chinese restaurants in new york were small, but they did offer seating. This was before the era of takeout, after all. Unlike the upscale french restaurants, where the food just magically appeared from some place, in a chinese place, people actually walked by the kitchen. Those more familiar with western eating traditions believed that the chinese used dogs, rats and cats their food - a misperception borrowed from white san franciscans.
