In the early years of the 19 thirties, many communities did not have a lot of money to spend on the poor. So they started giving families access to land instead. They began running all kinds of articles about how to make your food budget stretch. People ate a lot of eggs. Eggs remained a cheap source of protein. And there was a whole range of dishes that you could do based on what family wanted,. Not based on what mly needed but based on what you could do with potatoes.
