The Importance of Fermentation in Coffee Production
Fermentation is important for quality and for flavor differentiation, but it's not a given. There are at least three different ways to remove the seeds from a pomegranate. The industry tried to remove fermentation because it was thought to be inert. But I can prove that fermentation matters in three different ways. A lot of producers started removing the fermentation step from processing coffee.
