As the bean heats up and expands, it actually makes an audible crack, cracking sound. And so that occurs depending on how much roast you're going for. I don't generally take my beans to second crack because I want a more medium to medium dark roast. So we developed those three senses over time. You just really, they, they almost become instinctive and you just, you just learn to rely on them.
