What Can I Use Instead of Garlic?
Emma Stanton: I don't like garlic, because it leaves such an aftertaste. In Italy, they often take whole cloves, and they might smash them a little bit. And they cook them in, let's say, the oil, while they're cooking something. They remove the garlic cloves before serving. So you get a very nice, gentle, smooth garlic flavor without the aftert Taste. Never use a garlic press, thinly sliced cloves, and put them in with the oil, or whatever. By not crushing the garlic, you also do not get a strong aftert taste. If neither of those work, I would just use shallots. But you'll get some of
