How Do You Get People to Talk?

Do you record these conversations, or just let it go and let it be, and then jot nos. How do you actually approach that? Normally i sit and i type as i talk. So i'm basically just writing own everything that's said to me. Other things are like imale questions to people. A lot of the more loyered up type of characters that you're talking to a would rather have you email them questions so they can write questions back to you.
