The different types of tea that you get are based on how it is processed and prepared. No matter what sort of tea preparation, certain steps are common to many of them. The rolling part here is often done via machines today, but was historically done by hand. Rolling without breaking here twists and crushes the leaves in a way that releases sap, exposes it to oxygen and stimulates fermentation.
