Why We Do Not Eat the Blood
The ramban offers various explanations. He says that the blood was given for a specific purpose to be placed upon the altar, and therefore s designated for sacrificial use. And he goes on to explain that there's a differece between the blood and the meat. TheBlood does not get digested, and right away comes into the animal that consumes it. If you eat that, you are going to mingle the human soul with the animalisticSoul of an animal. That is diven t for spiritual uses and not for physical uses.
