How Fish Processing Works

And so now it's on ice for some number of days until that ship gets back to offloading at the processing point. That inflates it in the process. So you end up with a different texture, a different flavor, a different nutrient composition slightly... There are things that we measure called inisidine and lipid peroxides in the fish that tell us how much aging it's undergone.
