How to Pick Grapes in the Field

We pick first thing, you know, we get there right before sunrise. So I'm usually leaving my house around 4.30 driving up the hour to get to the vineyard and then start the pick in the early morning. And so for native fermentation, I actually like things to be a little bit warmer, but they want to pick when it's cool out. We don't put it through a distimmer at all. What we generally do is we foot tread a few of the bins. They kick off right away. It's kind of like a Christmas tree where you're like, right? Looking all up and down. The coldest time of the day is actually right before sunrise
