The Problem With Unpaid Labor in the Restaurant Business

I had not realized how pervasive unpaid labor was in the restaurant business. There's a whole realm in which you're sort of expected to work for prestige. I am very much reminded of apprenticeship systems that work a little bit like this. If it's reasonable to think about the non-paid or underpaid labor as this is a real investment that makes you better off at some point in time, I don't think I have a big problem with that.
