There's definitely indications that vegetarianism and veganism is probably making people less resilient to mental stresses. But it's not the typical case that someone goes vegan and then what happened to me happens to them. Granted, we don't have the data to know how many people stay vegan when they go vegan and how many people stop being vegan.
