How to Cook Mushrooms
Boiling mushrooms is the right thing to do. That means that they're perfectly cooked in texture. You're never going to be able to over-boil them. The M.A.R. reaction is not only going to happen on the outside forming a crust, it's going to be driven right into the mushrooms. So long as I can push the heat,. so that's what I want to do. This I want high heat. There's so much moisture still in these mushrooms. Even though they started at 95% moisture, even now they're at about 90% moisture. They've actually lost some of their physical weight into the broth.
