The New England kitchen was also preparing what was described as Yankee cuisine, foods that often had British roots. Many immigrants from other parts of Europe found the menu to be unappealing based on what they could make at home. But it did have an impact in other ways including providing school lunches for Boston School Committee and conducting cooking demonstrations during fairs.
