The Ethnic Restaurant Tour

Zagat first emerged in 1979 when a New York couple Tim and Nina Zagat asked their friends to rate and review the city's restaurants. Over time, the survey grew to include over 70 cities and tens of thousands of reviewers. Christianity turned to this data set that Zagat has collected over the years to understand what sorts of food have been considered popular over time. He publishes findings in his 2016 book, The Ethnic Restaurant Tour.
