The Effects of Bread on Gut Microbiome
The gut microbiome is really the trillions of gut microbes that live mainly in our lower intestine and our colon. We're increasingly learning how vital it is to have the best possible combination of gut microbes there. At the moment, it's only based on the fibre content, and also we downscore breads if they're highly processed. There aren't large studies done to really hammer home the clear differences between sourdough using these natural yeasts and the chemical yeast and chorlywood.
