"I think restaurants and subscription services are vastly underutilized. I wouldn't be surprised if we saw many more smaller dining rooms where some like a mini not quite a ghost kitchen, but a kitchen that is just designated for deliveries to a far greater extent than we have it to day," he says. "In particular, in crowded cities, we shrank to kitchens in unbelievable ways to get evermore tables into dining rooms."
