The Story of the Aviator Salad
Caesar Cardini's Tijuana eatery was the place to be on July 4th of 1924. The restaurant faced an unusual rush of customers, one that caused the kitchen to run out of almost every ingredient they had. There were still a few things left, including eggs, cheese, and something called cause. Cause was a long, dark, green lettuce native to the Mediterranean and Middle East. In his version, he invented it in the late 1920s and called it the aviator salad.
