The Only Way You Can Do That Is With Two Touches
I imagine that the two touches are useful because when you have really aggressive high quality defenders, they're much closer to you. You want them to be able to manipulate defenses and create spaces. But when you say the only way you can do that is with two touches, I think that something's lost. Your practice and solution rather than solving the problem. So it might even be like small touches deceptively or pretending to play short and then dribbling through a gap. That's not a governing constraint in the game itself.
