Galaxies don't actually form in complete isolation. They tend to have neighbors, they tend to have other galaxies around them. And so that means that there is a nonzero chance that they'll just crash into each other. The biggest galaxies we find are probably about 10 times the mass of the Milky Way. There's lots of that weather type thing going on for each individual galaxy but also how did the galaxies overall form?
