How to Work With Iron Corn
Iron corn does not rise quite as high as wheat. It's probably going to ferment more quickly and it doesn't need much working. What I would say is make sure you've nailed that starter first. Find a recipe online for iron corn. Again, Leo at the Perfect Loaf has got one of those and watch your loaf and learn from it.
