The One Lever That Will Change Things?
There's a kind of big industry playbook that says put the blame on the consumer. We only grow tobacco because people want to smoke, we only create energy because people are using fossil fuels or whatever it is. So I think the political levers are really about politicizing the food system so that it becomes a political issue. And if we say we want to change, we want the system to change, then politicians start paying attention. The society will be better if we go through this low-carbon transition, sustainability transition and food system transition,. They're all deeply intertwined and will be better off with our health system under less pressure.
